Inspired by a Brazilian Feijoada this Smokey Veggie Black Bean Stew is hearty, flavorful and with exception of the side of yogurt, 100% vegan! It just makes me happy :) This stew is made with bell peppers, butternut squash, sweet potato, red onion, black beans and garlic all on a bed of brown rice. Seasoned with smoked paprika, coriander and cumin. Served with a side of plain yogurt and a side of fresh salsa of tomato, chili, cilantro and lime juice. Reheat the stew and top with the yogurt and salsa, mix and totally enjoy! This is such a wonderful way to get in your veggies!
