Every Fall I make some version of this roasted root vegetable soup. It’s heart warming and Fall in a bowl. This season I’m making a roasted butternut squash, sweet potato, parsnip, leek and apple soup blended with vegetable stock and seasoned to perfection. Topped with dried cranberries and pumpkin seeds. This one will make you grateful for the season. Each container serves 4 cups of soup.
